A lot of knowledge about the use of herbs and spices was once passed on from generation to generation. Today, much of that knowledge has been lost forever. Only grandmothers still know anything about this traditional medicine and that means that this knowledge will soon be completely lost.

We at Aljeta have received a number of old recipes from grandmothers in Albania, but will try to give them a modern twist.

The Traditional Recipe

 The traditional recipe is similar to our Recipe for Olive Oil Honey and Lemon Elixir.

However, we at Aljeta felt the ingredients fit much better as a delicious Dressing for over any salad.

“Olive oil, honey, and walnuts mixed in equal parts in a jar. Recommended to take a table spoon on a empty stomach for a week to give your health a boost.”

The ingredients: And their health benefits

  • Extra virgin olive oil: Contains many mono and polyunsaturated fatty acids, which have a positive influence on your heart and blood vessels, while a substance in extra virgin olive oil, oleocanthal, even has an analgesic effect)
  • Honey: The antioxidants in honey appear to have a positive effect on the development of cardiovascular disease, while other studies show that honey has antidepressant properties.
  • Lemon: contains a lot of vitamin C that stimulates the absorption of iron, while the soluble fibers have a positive effect on cardiovascular health by lowering the ‘bad’ LDL cholesterol level. It is less known that regularly consuming citrus fruits has a positive effect on depressive feelings [1].
  • Walnuts: are full of mono and polyunsaturated fatty acids, which also already have a positive influence on your heart and blood vessels, while also appearing to have antidepressant effects.
  • Black Pepper: Rated as a powerful antioxidant. The compounds in the spice – especially the active ingredient piperine – are said to protect against cell damage, improve nutrient absorption and help with digestive problems.

  • Serves 1 Salad

Ingredients

  • Juice of one lemon
  • 1 tablespoon honey
  • 1 tablespoon Aljeta extra virgin olive oil
  • Half teaspoon Aljeta sea salt
  • Half teaspoon black pepper
  • Half cup toasted walnuts, ground to a coarse powder

Instructions

  1. Put all the ingredients in a small bottle and shake it vigorously until everything is well mixed.
  2. Check if you need to add more salt, lemon or honey. The dressing should be slightly spicy or it will taste bland because of the walnuts.
  3. Pour the dressing over the salad.

Notes

This walnut dressing can be stored in an airtight bottle or jar in the refrigerator. It is useful to shake it briefly before use to remix the ingredients. So dont hesitate to make a little more.

Alternative recipe

Not a fan of the sour taste of lemon. Try the alternative with orange juice. Using orange juice makes this dressing slightly sweeter in taste.
