Autumn is the traditional period to make this dish because all the ingredients are ripe at that time. By preserving it, the population has access to vegetables throughout the winter, containing the necessary vitamins.<\/p><p>The term ajvar (Aj\u0432\u0430\u0440) is a remnant of the Ottoman (Turkish) rule over the area.
